5 Ingredient Vegetable Fried Rice

This recipe, and variations of it, are my go-to meals in a pinch or when I am looking to maximize my vegetable intake. If you are looking to create a budget friendly meal that you can enjoy all week, this recipe is for you!

what you will need:

soy sauce*

hoisin sauce*

2-3 cups of rice or quinoa

2 small zucchinis (or 1 large)

2 bags of frozen stir fry vegetables

*these are pantry staples of mine! if you have these two sauces on hand you can make a Chinese fried rice or any stir fry dish in minutes with great flavor!


Anyone who knows me, knows I hate recipes and never measure or set a timer for anything. I don’t know why I am this way, but I am. So I am going to provide the rough directions I follow, but again there is always wiggle room in any recipe, in my opinion.

First, start to cook your rice and quinoa in a separate pot. Make more or less of your preferred grain depending on how many people you are feeding. 2-3 cups of rice usually covers 5 meals for me.

While that is cooking, add a generous splash of olive oil to a large fry pan and add in both bags of frozen stir fry vegetables. Let them heat up in the pan.

Next, chop up the zucchinis so the pieces look like semi circles and add to pan.

Keep an eye on the vegetables and once they are all cooked through and have a little color on them, the rice or quinoa should be ready to be added to the pan.

Once all the ingredients are combined in the large frying pan, add 3-4 tablespoons of hoisin sauce (this really gives the dish great flavor so add as much as you want to taste) and drizzle soy sauce to coat the rice and give it a nice color. The sauces give the dish its yummy Chinese take out flavor so you can include as much or as little as you desire.

After it the sauces are thoroughly mixed in, serve and enjoy!

This has been my go to recipe in college for weight loss and money saving. It has allowed me to indulge in the flavors of Chinese food without sacrificing my goals or budget. This is also a meal that keeps really well in the fridge for a weekly meal prep! I never get sick of it and always feel like I am getting a treat each time I eat it!
