Here is my super easy, vegan spring roll recipe. This is a super refreshing and satisfying meal that can easily be adjusted to each individuals liking. These are great for a summer picnic or for a lunch on the go. Veganizing your favorite foods is the key to enjoying this compassionate lifestyle, and spring rolls are a must for me!

Here’s what you will need:

For rolls:

Spring roll wraps

Bean thread noodles

Red/Yellow bellpeppers

Seedless cucumber

Avocado

Purple cabbage

Shredded carrots

Fresh mint

For dipping sauce:

1/2 cup of peanut butter

1/8 cup coconut aminos

1/3 cup maple syrup

2 tbsp of sriracha

Directions:

Boil bean thread noodles and prepare according to package.

Finely slice all vegetables.

Soften the spring roll wraps by placing them in warm water for a few seconds and then lay them flat. Add in finely sliced vegetable ingredients and cooked noodles, then wrap tightly burrito style.

Blend all dipping sauce ingredients until completely smooth.
